Caramels
2 cups white sugar
1 1/2 cups dark Karo syrup
1 cup butter
1 pt whipping cream
1 pinch of salt
1 tsp vanilla
Butter for pan
Aluminum foil
Wax paper
In large pan, over medium-low heat(#3-4) on stove, mix sugar, Karo, butter and 1 cup of whipping cream. Bring to a boil and boil for 5 minutes STIRRING CONSTANTLY. Add remaining cup of cream one tablespoon at a time while stirring. If it stops boiling, bring it back to a boil before adding more cream. Cook to firm ball 244-248 degrees F. (Use a candy thermometer) This stage takes about 15 min(perhaps a little longer 20-25 min) Remove from heat. Add vanilla and salt. Pour into buttered 8x8 inch pan. I butter aluminum foil and press it into the pan. Cover with wax paper(prevents a film from forming). When it is completely cool, just pull out the edges of the aluminum foil and peel it off of the candy. Cut it up into squares and wrap in wax paper. Recipe from Anita Vickers
