ok so we love love love the peanut butter sauce at Leatherby's. I was going to pick some up for Chris for Valentine's Day, but then I decided to just look up a recipe instead. This one was pretty yummy! Then my mom decided to make a new recipe of fudge sauce to go with it. Both were delish!
PB sauce for ice cream
1/2 cup heavy cream
1/4 cup sugar
1/4 cup light corn syrup
2 TB butter
1 tsp vanilla
1/2 cup creamy peanut butter
Combine all ingredients except for vanilla and peanut butter in a small pot over the stove and melt. Add vanilla and PB after everything else has dissolved. Stir and serve!
Hot Fudge Sauce(America's test kitchen cookbook)
10 oz semisweet chocolate, chopped(or chocolate chips)
1/3 cup cocoa powder, sifted
3/4 cup light corn syrup
1/3 cup sugar
1/3 cup heavy cream
1/3 cup water
pinch of salt
3 TBS unsalted butter, cut into 1/4-in pieces
1 teaspoon vanilla extract
Microwave chocolate, whisking often, until melted and smooth, 1 to 3 minutes. Whisk in the cocoa until dissolved.
Meanwhile, simmer the corn syrup, sugar, cream, water and salt in a medium saucepan over medium heat, stirring frequently, until thickened about 4 minutes.
Off the heat, whisk in the butter and vanilla. Cool the mixture slightly about 2 minutes, before whisking in the melted chocolate until smooth.
